The June 12 issue of the Santa Maria Sun featured an extensive article on beef production (ā€œHere’s the beefā€), including a reference to cholesterol and a claim that the American Heart Association ā€œhas determined that cholesterol is controlled by hereditary factors and genetics.ā€ This is only part of the story and is very misleading. A brief visit to the site of the American Heart Association reveals their position on dietary influence:

ā€œSaturated fat is the main dietary cause of high blood cholesterol. Saturated fat is found mostly in foods from animals and some plants. Foods from animals include beef, beef fat, veal, lamb, pork, lard, poultry fat, butter, cream, milk, cheeses, and other dairy products made from whole and 2 percent milk. All of these foods also contain dietary cholesterol.ā€

A dietary conscious person will continue to avoid animal fat for health reasons.
