ONE STELLAR CELLAR: Bacara Resort and Spa’s “Meet the Masters” monthly dinners will be set here, in the intimate Miró restaurant wine cellar, surrounded by 12,000 bottles of exceptional wine, original artwork, rustic candelabras, floral displays, and a grand fireplace.

Bacara Resort and Spa on Santa Barbara County’s Gaviota Coast is debuting an extraordinary new dinner series called “Meet the Masters” the third Thursday of every month.

This is a rare opportunity to break bread with, and pick the brains of, true geniuses in the fields of wine and spirits during an exclusive multi-course dinner served in the luxurious and private 12,000-bottle wine cellar at Bacara’s Miró restaurant.

The first featured guest is the legendary Fred Dame, a master sommelier since 1984 and founder of the American branch of the Court of Master Sommeliers.

Dame was the first American to successfully pass all three parts of the prestigious Master Sommelier Diploma exam in a single year.

As the cellar master at The Sardine Factory in Monterey for 12 years, Dame created a wine list that won the Wine Spectator Grand Award.

More recently, Dame was featured in the 2013 documentary film SOMM, which follows several young American sommeliers in their quest to pass the nearly impossible master sommelier test.

Bacara is bringing Dame in for its inaugural “Meet the Masters” dinner on Jan. 16.

GRAND DAME: Possessing one of the most precise palates on earth, Master Sommelier Fred Dame is a legend in the wine world. He will be the guest master at a special wine dinner at Bacara Resort and Spa in Santa Barbara on Jan. 16.

“It’s not very often we welcome a master wine or spirit sommelier of this level to Santa Barbara,” said Kathleen Cochran, general manager of Bacara Resort and Spa. “We are honored to share in their impressive talents as we offer our guests a truly exceptional dining experience they could only get at Bacara.”

On Feb. 20, Bacara welcomes Nicholas Krafft, sabrage and Champagne master and president and CEO of the global retail company Christofle.

Perrier-Jouët Champagne will be poured at the evening’s reception.

Krafft will demonstrate the art of sabrage, a technique that involves using a sabre to slice open a Champagne bottle in rather dramatic fashion.

On March 20, Kobe, Japan native Yuji Matsumoto will be the featured guest master.

He is the United States’ first master sake sommelier and shochu specialist. Matsumoto is employed as the beverage director at Kabuki Restaurants, based in Los Angeles.

Bacara describes the Matsumoto event as “an exploration of the finest sake you’ve (probably) never tasted.”

On June 7, Bacara welcomes Master Sommelier Brian McClintic, prominently featured in the film SOMM. McClintic is co-founder of Les Marchands Wine Bar & Merchant in Santa Barbara.

Each “Meet the Masters” dinner includes a champagne and hors d’oeuvres reception on the oceanfront Miró lawn, followed by an elegant four-course tasting menu created by Miró chef Johan Denizot, served in the beautiful wine cellar.

A native of Pontarlier, France, Denizot’s culinary career has taken him to Switzerland, the French Alps, Annabelle’s Bar & Bistro in San Francisco, Alisal Guest Ranch in Santa Ynez, and Root 246 in Solvang.

DRINK, DINE, AND LEARN: Every third Thursday of the month at 6 p.m., Miró restaurant at Bacara Resort and Spa will feature a different wine and spirit master during its new “Meet the Masters” dinner series. Set on a bluff with stunning views of the Pacific coastline, Bacara Resort is located at 8301 Hollister Ave., Santa Barbara. Advance reservations are required. The guest Masters will expertly pair wine and spirits selections with each course.

Bacara’s “Meet the Masters” dinners are $150 per person, per event. Dinners are scheduled from 6 to 9 p.m. Space is limited and advanced reservations are required.
